Ingredients
2 cups all-purpose flour
1 cup granulated sugar
Β½ cup whole plain Greek yogurt
Β½ cup salted butter, melted
ΒΌ cup whole milk
2 large eggs
1 tsp ground cinnamon
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
ΒΌ tsp table salt
3 large Granny Smith apples, peeled and diced small
Β½ cup all-purpose flour (for streusel)
ΒΌ cup granulated sugar (for streusel)
ΒΌ cup packed brown sugar (for streusel)
ΒΌ cup cold salted butter, cut into pieces (for streusel)
ΒΌ cup chopped pecans (optional, for streusel)
Instructions
- Preheat oven to 350Β°F (175Β°C), with rack on lower middle position. Butter a 13×9 inch baking pan.
- Make the Topping: Combine all topping ingredients except pecans in a large bowl. Use your fingers to work the mixture into the texture of wet sand. Work in the pecans. Cover and keep chilled.
- In the bowl of a stand mixer (or a large bowl if mixing by hand), combine all cake ingredients except apples. Using the paddle attachment (or a whisk), mix at medium speed, stopping to scrape down the sides a few times, just until the mixture is combined. Don’t overmix!
- Use a rubber spatula to gently fold in the diced apples. The batter will be thick.
- Spread the batter evenly into the prepared baking pan.
- Sprinkle the streusel topping evenly over the batter.
