Ingredients

2 tsp baking soda

1 tsp salt

1 cup unsalted butter, softened

1 cup brown sugar

1/4 cup granulated sugar

4 overripe bananas, mashed

2 large eggs

1 tsp vanilla extract

1 cup sour cream (or plain Greek yogurt)

3 tbsp unsalted butter, softened

3 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

Pinch of salt

Chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350Β°F. Grease and flour a 12-cup bundt pan or use nonstick spray with flour.
  2. In a medium bowl, whisk flour, salt, and baking soda.
  3. Mash bananas until mostly smooth.
  4. In a large bowl, cream butter and sugars until fluffy.
  5. Mix in bananas and vanilla.
  6. Beat in eggs, one at a time.
  7. Stir in sour cream.
  8. Gradually add flour mixture, mixing until just combined.
