This surprisingly delicious recipe combines Diet Coke and chocolate cake mix for a quick, easy, and incredibly moist cake. It’s a college-student shortcut that’s become a go-to for a simple dessert!

Ingredients

Scale

1 (18 ounce) chocolate cake mix (I prefer a “fudge” cake mix with pudding in the mix, but this recipe will work with whatever you have)

1 (12 ounce) can Diet Coke

1 (8 ounce) container Cool Whip Free or (8 ounce) container Cool Whip Lite

Instructions

  1. Preheat oven to temperature on cake mix box.
  2. Grease a 9×13 pan.
  3. Combine cake mix and Diet Coke in a large mixing bowl.
  4. Mix according to directions on box (For example, my favorite brand says to mix at medium speed for 2 minutes!).
  5. Pour into 9×13 pan.
  6. Bake 5 minutes less than the recommended time on the box. (For example, if the box says to bake a 9×13 cake for 28 minutes, bake your Diet Coke Cake for 23.)
  7. Cake is done when a fork or toothpick inserted in the middle of the cake comes out clean.
  8. Cool in pan on wire rack.
  9. When cooled, frost with Cool Whip topping.
  10. Refrigerate leftovers. (I never have any!)

Notes

  • Feel free to experiment with different flavors of cake mix! Red velvet would be amazing.
  • For a richer flavor, you can add a tablespoon of cocoa powder to the batter.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days (if they last that long!).
