Ingredients

1 English cucumber, chopped

2 limes, zested and juiced

⅓ cup cilantro, roughly chopped

Salt and pepper, to taste

Instructions

  1. In a large bowl, combine chopped pineapple and cucumber.
  2. Add lime juice, lime zest, and cilantro.
  3. Toss gently to combine and coat everything evenly.
  4. Season with salt and pepper if you like.
  5. Serve chilled or store in the fridge until ready.

Notes
