Learn how to make a delicious and versatile herbal cordial! This anise digestive cordial is a fantastic way to capture the essence of herbs and spices, perfect for sipping, cocktails, or cooking

Ingredients

1 part Anise seeds

1 part Fennel seeds

½ part whole Black Peppercorns, un-ground

4 parts dried Figs, chopped

1 Vanilla bean, slit lengthwise and seeds scraped out

750ml Vodka (or Brandy)

¼½ cup Honey (or Maple Syrup), to taste

Instructions

  1. Combine anise seeds, fennel seeds, black peppercorns, and chopped figs in a clean glass jar.
  2. Add the slit vanilla bean (including the scraped seeds) to the jar.
  3. Pour vodka (or brandy) over the ingredients, ensuring they are completely submerged by at least 2 inches.
  4. Seal the jar tightly, label with the date, and store in a cool, dark place for 6 weeks.
  5. Shake the jar consistently (every few days) throughout the maceration process.
  6. After 6 weeks, strain the cordial through muslin or cheesecloth into a clean jar. Do not squeeze the fresh ingredients.
  7. Sweeten with honey (or maple syrup) to taste, starting with ¼ cup and adding more as needed.
  8. Age for an additional week or two for enhanced flavor complexity (optional).

Notes

  • Feel free to experiment with different sweeteners! Molasses or fruit concentrates would also be delicious.
  • For a stronger anise flavor, lightly toast the anise seeds before adding them to the jar.
  • Store the finished cordial in a cool, dark place for up to a year.
